About the Experience 

Assam is a land of multiple tribes and communities with distinct cultural identities of their own. In these three hours you would experience the Unified version of the various signature dishes of these communities residing in the hills and valleys of Assam, starting with special magic rice with G.I tag, the power-packed Black rice, Smoked pork, Kol Khar, Bamboo shoots, Ghost chilies, Duck meat to special Bihu delicacies

A passionate cook, a hardcore foodie and an avid traveler who aims to spread the word about Assamese cuisine far and wide. A recipe developer for various Food and Beverage organizations and a budding chef and cookbook writer.

Let's get ready for a day in Assam. Shall we?

 

Welcome Drink

  •  Luscious Ou-Punch

Frozen Outenga (Elephant Apple) extract, sizzling soda and a slice of Assamese Lemon. A sweet and sour chilled drink to take away the Bengaluru heat and get you started!

 

Starters

 

  •  Jolpaan: The Warriors favourite!

A medley of magic rice, xurum, curd, banana, jaggery and cream- once a breakfast staple of every Assamese household, is now usually had on special occasion or served to special guests.

  •  Pitha Pona

A plate of assorted Bihu delicacies from Assam- Til Pitha, Narikol Pitha, Laaru, Malpua etc

 

  • The Axomiya Arancini Balls

My take on the popular Sticky rice and Baby potato combination of Assam served with a special Pani Tenga Dip.

 

Main Course

  •  Tenga Mora Dal

Dal flavoured with Dried Roselle Calyx and Leaves.

 

  • Black Dal Khar

A special alkaline delicacy of Assam prepared with the extract of dried and grilled Hump backed banana peel.

 

  •  Guti Aloo Til Di Bhaja

Crispy fried Marble potatoes slathered in a smooth black sesame paste. This is a special variety of potatoes that doesn’t grow any larger than the size of a marble, had its roots Northeast India and has recently made its way to the western parts of our country.

 

  • Kosu Jalukia

Taro Leaves and Stem in spicy peppery and mildly tangy gravy.

 

  • Zika/Joha bhul Murighanto

A preparation of fish head with Ridge gourd or Fragrant Sponge gourd.

 

  • Amlokhi’r Masor Tenga Anja

Masor Tenga/ Sour Fish Curry is a signature fish curry of Assam. Though the most popular version is the one with tomatoes, I would go for the one with Goose berries, as it has always been a hit recipe with my guests.

 

  • Smoked Pork with Bamboo Shoots and Ghost Chillies.

This dish needs no introduction, aint it?

 

  • Posola Murgi Manngsho Jalukia

Chicken prepared with tender Banana Shoots with a hint of Sichuan Pepper.

 

  •  Haah Kumura

Duck slow cooked with Ash Gourd is one of the coveted recipes of Assam, served to guest as a gesture of gratitude and affection.

 

Accompaniments

 

  •  Pura bengena aru Bilahi Pitika

A mash of Roasted Aubergine and Tomatoes..

 

  • Panitenga Aloo Pitika

Panitenga- fermented mustard paste is a part of quintessential traditional Assamese platter. It is had just as it is and tastes even better when added to mashed potatoes.

 

  • Smoked Fish Bamboo Shoot Chutney

An absolutely delicious chutney of River fish that has been smoked for weeks with some bamboo shoot, garlic and chillies.

 

  • Maan Dhoniya Chutney

A chutney comprising of Burmese coriander and Raw Mango

 

Desserts

 

  •  Black Rice Pudding

Fragrant Sticky Black rice slow cooked in full fat milk until soft and luscious. Served with some dry fruits and shredded coconut, I hope this would be a perfect sweet ending to your Assamese food trail.

 

  •  Phalap Smoked Tea

A special organic Tea that has been traditionally processed by aging in Bamboo Hollows for weeks to even years by Singpho community of Assam and is known to have a bounty of health benefits.

Main Course Dishes would be served with Rice.
